Cinnamon rolls, but make them cookies? Yes, please! Cinnamon rolls are one of my favorite desserts, so why not make them as cookies? These cookies are delicious, crunchy, and perfect to serve next to a warm cup of tea or coffee.
They are simple to make and keep well for weeks in an airtight container. They are a perfect snack throughout fall and winter. You can make them for Halloween or for Christmas—they fit every occasion. Because they keep so well, you can also use them as one of the cookies for cookie boxes that you can prepare for Christmas gifts.
The best thing about this recipe is that it is truly so simple to make with ingredients you probably already have at home.

- In a large bowl, mix together room temperature butter, egg, and sugar. Add the flour and baking powder, and knead with your hands or a stand mixer until a smooth dough forms.
Cinnamon filling
Ingredients
Brown sugar: 70 g
Cinnamon: 1 tsp
Water: 1 tbsp
- In a small bowl combine cinnamon and sugar.
Rolling the dough and baking
- Divide the dough into two parts, and roll each one out on a floured surface into a square shape. You can also roll the dough without dividing it, but working with smaller batches makes rolling easier.
- Using a brush, lightly brush about 1 tablespoon of water over the surface of the dough.
- Spread the cinnamon filling onto the dough, then tightly roll the dough into a log.
- Let the dough with cinnamon filling rest in the fridge for about 30 minutes to set, then slice it into pieces that are about 3 millimeters thick.
- Line a baking tray with parchment paper. Bake in a preheated oven at 180 °C (356° F) for about 10 to 15 minutes or until golden brown.

- You can use a small spoon to sprinkle a little water onto the dough. Be careful not to use too much.

- Yes, you can leave it in the fridge overnight. Just let it sit at room temperature for about 10 minutes before slicing it into pieces and baking.
