From a Pot: Pasta with Creamy Asparagus Sauce and Shrimp
Creamy asparagus sauce with pasta and crispy shrimp.
Asparagus is one of my favourite vegetables. I eat them all the time when they’re in season. They are so easy to prepare, low in calories, and have tons of health benefits. They come in three different colours: green, white, and purple. I used white ones for this recipe. I also tried to make the same recipe with green asparagus, but the white ones just taste better with shrimp.
This recipe is simple to make and ready in just about 30 minutes. It's the perfect weeknight dinner idea or lunch.

White asparagus: 300 g
Shrimp: 50 g
Butter: 10g/cup

Garlic: 1
Salt: 1 tsp
Paprika powder: 0.5 tsp
Garlic powder: 0.5 tsp

Vegetable soup broth: 150 ml
Cooking cream: 40 ml

- Cut off and discard the woody ends of the asparagus, then cut them into discs. Cut the onion into small pieces and mince the garlic.
- In a large pot, cook the pasta based on the instructions on the package. While the pasta is cooking, prepare the sauce.
- In a large skillet, melt the butter and cook the shrimp with a pinch of salt, paprika powder, garlic powder, and a pinch of pepper. Cook the shrimps for about 5–7 minutes, depending on their size.
- When the shrimp are done, transfer them to a small bowl and set aside.
- Add more butter to the pan if needed, and sauté the onions with garlic for about 2 minutes. Add in the chopped asparagus. Season them with salt, pepper, and some garlic powder.
- Add the vegetable soup broth, cover with a lid, and cook for about 15 minutes on medium heat or until the asparagus is done.
- Blend the sauce until creamy, then add the cooking cream. Cook for another minute, add more seasoning to taste if needed, and then add in the pasta.
- Mix the pasta with the sauce, then top it with shrimps, a pinch of nutmeg, and some parsley.

Notes:
- What kind of shrimp do I use?
- I prefere mini shrimp, but you can use whatever ones you like. The cooking time may differ based on the size of the shrimp you use.
- Do I have to use heavy cream?
- You can skip it for a healthier version of the sauce. The sauce will tase a bit different but just as good.
