From a Pot: Walnut Pie
Walnut pie with apples for autumn days.
This is my favorite version of a pie. My grandma used to make it when we were baking bread. This pie is supposed to be baked in a stone oven next to the bread, but since most of us don’t have that option, I adapted the recipe for an electric oven. Traditionally, you are supposed to use the same dough as you would use for bread, then top it with walnuts and fold the edges like you would for pizza.

Salt: 0.5 tsp
Rum: 1 tsp

Sugar: 20 g
Dry yeast: 5 g
Butter: 30 g
Milk: 80 ml
- Add yeast and sugar to a lukewarm milk and allow to proof until yeast resembles a creamy foam. About 10 minutes.
- To the flour add the egg, salt, grated lemon peel and rum. Combine all the ingredients, then add the yeast mixture and start kneading the dough.
- Melt the butter and add it to the dough. Knead the dough until you get a smooth texture, then cover it with a napkin and leave it to rise in a warm place for about an hour.
- When the dough rises, roll it out on a floured surface to about 0.5 cm thick. Coat the baking tray with butter and transfer in the dough.

Ground walnuts: 300 g
Rum: 2 tbsp
Apple: 1
Orange juice: 1 tbsp
Coffee: 1 tsp
Cinnamon: 1 tsp
Sugar: 70 g
Plain yogurt: 120 g
Butter: 50 g
Heavy cream: 100 ml
Egg: 1
- Heat the cream slightly, be careful not to boil it, and pour it over the walnuts.
- Peel an apple, grate it and add it to the walnuts. Then add melted butter, egg, sugar, freshly pressed orange juice, coffee, cinnamon and yogurt. Let the walnuts rest for about 15 minutes, so that they get moist with ingredients.
- Spread the filling evenly on the pie crust.
Bake and serve
- Bake at 200 degrees Celsius for about 30 minutes, or until the walnuts turn slightly brown.
- Wait for the pie to cool and serve with vanilla ice cream or salted caramel. The pie tastes best the next day.

Notes:
- Use freshly squeezed orange juice.
- You can also use cottage cheese instead of yogurt and instead of heavy cream you can use milk.
- What to do if a filling is too runny?
- If your filling is a bit runny, add some bread crumbs to it or more walnuts.
- Do I need a pie baking tray?
- No. You can also use a regular baking tray with parchment paper. When you top the dough with walnuts, fold the edges of the dough like you would for a pizza.
